After my celiac diagnosis, it didn't take long before I began to think about gluten-free hiking. I decided to hike a 400-mile section of the Pacific Crest Trail and experiment with gluten-free food options. I also wanted to know if my small intestine was healing and if I would feel better on trail.
Unfortunately for me, I had a stockpile of freeze-dried meals that were NOT gluten-free. I toyed with the idea of trying to sell them but decided to give them to a fellow hiker who could enjoy them. I ordered some gluten-free freeze-dried backpacking meals online and Eva and I visited Costco and bought a box of every snack bar labeled gluten-free.
I picked July 15. 2023, as the start date for my hike, and began the familiar process of making an itinerary, packing resupply boxes, and getting my hiking gear ready. If you are wondering if the hike was a success, you'll get all the details in another post coming soon!
